Total Solar Eclipse- August 21, 2017

Today we witnessed a really fantastic event. It was amazing how dark it got when the moon totally eclipsed the sun at 2:38 p.m. in our area. The wildlife was very silent. Shortly before the total eclipse, we saw no squirrels or birds as we normally do.

During the eclipse, the automatic lights on the deck came on and the crickets started chirping. I am so thankful that I got to witness this in my lifetime!

Have a Blessed Easter


Prime Rib with garlic/herb butter

INGREDIENTS

Servings: 7-9
1 cup butter, softened
7 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
2 tablespoons salt
1 tablespoon pepper
5-7 pounds boneless ribeye roast, trimmed
2 tablespoons flour
2 cups beef stock
Mashed potatoes, to serve
Green beans, to serve

PREPARATION

1. Preheat oven to 500°F/260°C.
2. Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.
3. Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.
4. Bake for 5 minutes per pound of meat — so a 5-pound roast would bake for 25 minutes and a 7-pound roast would bake for 35 minutes.
5. Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.
6. Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.
7. Add the flour, whisking until there are no lumps, then add the beef stock, stirring and bringing the sauce to a boil.
8. Remove from heat and strain the sauce into a gravy dish.
9. Carve the prime rib into ¾-inch slices, then serve with the mashed potatoes, green beans, and sauce!

Crab and Horseradish Dip

1T prepared horseradish (more or less depending on taste
1- 8 oz. pkg. softened cream cheese
1/3 c mayonnaise
2 T cocktail sauce
1- 4 oz. can crab meat (drained)
1 T lemon juice (optional)

In a small bowl combine the mayonnaise  and cream cheese until blended. Add the horseradish and cocktail sauce. Make sure to scrape down the sides of the bowl with a spatula until well blended. Fold in the crab meat and add a squeeze of lemon juice. Cover with plastic wrap and refrigerate. When chilled serve with crackers or chips.

Cucumber-Dill Dressing

Cucumber-Dill Dressing

Serves 6

1 cup peeled, chopped cucumber
3/4 cup plus 2 tablespoons plain yogurt
3 tablespoons chopped fresh dill
2 teaspoons sugar
2 teaspoons lemon juice (real lemons, not that bottled stuff!)
1/8 teaspoon pepper

In a food processor or blender, blend 1/2 cup of the cucumber with remaining ingredients until smooth.
Stir in remaining cucumber; chill.

Use on your favorite salad and enjoy!

A little healing time

Please, take my advice and DO NOT sunbathe without sunblock.  My skin cancer is a result of sunbathing with baby oil etc. to try and get tan. I have warned those that use tanning beds. Sadly, skin cancer is on the rise. Please use common sense and sunblock.

Mini Quinoa/Rice Frittatas

We used this recipe when we had company this weekend and served these with some really nice slab bacon. It was a big hit.


Mini Quinoa/Rice Frittatas

Makes 10-12 muffin sized frittatas

    1/2 cup quinoa or RICE
    4 eggs
    1 cup zucchini, shredded (Or chopped fresh spinach)
    3/4 cup cheddar cheese, shredded (Or swiss cheese)
    1/4 - 1/3 cup onion, chopped
    Salt and pepper to taste

Directions:

Preheat oven to 350°F. Line a muffin tin with liners (I used foil ones) or coat with non-stick spray.
Place quinoa or rice and 1 cup of water in a small saucepan over medium heat. Bring to a boil and reduce heat. Simmer for 10-15 minutes, until grain is slightly translucent and water is absorbed. Remove from heat and set aside.

In a large bowl, whisk eggs, zucchini, cheese and onion together. Add in cooked quinoa and stir to combine. Add salt and pepper to taste. Spoon frittata mixture into the prepared muffin tin, filling each cup almost full. Bake for 20-25 minutes, until fully cooked through.

Traditional Irish Stew

Ingredients for cooking Traditional Irish Stew

  • 2 large onions
  • 4 large Carrots
  • ½ stewing steak /or lamb
  • 8 large potatoes
  • Salt & pepper (personal preference)

How to make Traditional Irish stew

  • Wash and cut onions into moderate size chunks and add to the pot. (dont like onions? Do not worry, this can still be cooked without onions).
  • Wash carrots and cut into chunks (some prefer thicker chunks for taste).
  • Wash and peel the potatoes (spuds) then cut each one in half.
  • Slice the meat into smaller pieces. If using stewing mince roll into meatballs.
  • Get a large pot and fill it with water. Add the potatoes and meat.
  • Heat pot until water boils then add carrots and onions.
  • Keep on a low boil and stir every now and then until vegetables are cooked.
  • Serve hot!
Cooking time for the Irish stew should be approximately 60 minutes or when the meat is fully cooked and the potatoes are soft inside (check using a fork) but there is no harm in keeping it on a very low heat for longer. It can also be reheated to be served later.
Serving Irish Stew
As a hearty meal Irish Stew can be served almost any time of day although we would draw the line with eating it for breakfast. Served up in a bowl when its piping hot Irish Stew makes a delicious lunch or dinner on a damp cold day. Along with a couple of slices of bread with some Kerry Gold butter this make the perfect comfort meal.
Family traditions & stew for kids
Many Irish people have been feeding on stew since they were toddlers and it has become in its own right an Irish tradition.
Our own mother would make a large pot of Stew for lunch every Saturday in the winter months. She would serve it in large bowls with freshly cut bread and butter to be washed down with either a glass of water or milk. Today its something we repeat with our own kids and hopefully they’ll continue in making this delicious meal.
If you are serving stew to a toddler its a good idea to only serve them part of the spuds & carrots by mashing it together, this should also soak up the gravy. Let it sit and cool before feeding as stew is usually served piping hot.

What meat to use for Irish Stew

There is no set rule on what type of meeting you can use, many prefer a beef stew, or a lamb stew, and even a mince stew. A personally favourite is mince stew, rolling the mince into small meat balls.
Experimenting with Irish Stew
Its blasphemous we suggest this but experimenting with stew can bring out some fantastic recipes. It is common for people to add some extra ingredients to give the stew more taste or to thicken it. A small amount of beef gravy granules can do the trick, don’t be afraid to experiment.

Irish Potatoes (candy)

Directions

  1. NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
  2. In a large bowl, cream together the butter and cream cheese.
  3. Add vanilla and confectioners' sugar.
  4. Beat until mixture forms a ball.
  5. Stir in coconut with a spoon.
  6. Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
  7. Place cinnamon in a shallow dish and roll the balls in it.
  8. Place the balls on a cookie sheet and chill for about 1 hour or until firm.
  9. If you prefer "dirtier potatoes" roll the candy a second time after they have chilled.

Irish fried cabbage with bacon

Found this recipe from Sugar and Soul for Irish fried cabbage. We plan on trying this on St. Patrick's Day with the traditional corned beef: The only thing we are going to do different is par-boil the cabbage to make it a little more tender when it is fried.

Irish Fried Cabbage and Bacon is a simple recipe that's pan fried in bacon grease and loaded up with bacon pieces and onion and seasoned with brown sugar, salt, and pepper.

Ingredients
  • 6 ounces thick bacon + drippings
  • 1/2 small onion, diced
  • 1/2 head green cabbage, shredded
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Cook bacon in a deep cast iron skillet over medium-high heat until crisp, about 4 to 6 minutes. Use a slotted spatula to remove the bacon pieces and transfer to a paper towel-lined plate.
  2. Add the diced onion to the bacon drippings and cook until translucent, about 1 to 2 minutes.
  3. Add shredded cabbage to the pan and toss to coat. Add in brown sugar, salt, and pepper and cook until cabbage is tender, about 5 to 7 minutes.
  4. Add the bacon back to the cabbage and cook for another 2 to 3 minutes. Serve hot and season with additional salt and pepper if desired.
Recipe Notes
Brown sugar can be left out if desired.
Leftover boiled cabbage can also be used, reduce cooking time.
This recipe is common in many regions with many variations, this one is mine.
